Instant Pot Sweet Potato Hummus

This hummus has both sweet potatoes and chickpeas which, in combination with cooking them in the Instant Pot, gives this an ideal texture. It has warm spices like cumin and chili powder which gives it a nice flavor too.

This one will make your friends say, “You made this? ~ Hell yes ~

Ingredients

  • 1 Medium sweet potato, cut into chunks
  • 2 15 oz cans of chickpeas, undrained. Don’t drain!!
  • 4 cloves of garlic, peeled and quartered
  • 1/4 cup of tahini
  • 1/4 cup olive oil
  • 1 TBSP lemon juice
  • 1 TSP salt
  • 1/2 – 1 TSP of chili powder
  • 1/2 – 1 TSP of cumin
  • Pepper to taste

Instructions

Prep time: 5 minutes

Cook time: 30 minutes

  • Put the sweet potatoes, garlic and both cans of chickpeas into the Instant Pot and set it to high pressure for 10 minutes. Let it naturally release.
  • Drain the liquid and add the potatoes, garlic, and chickpeas to a blender or large food processor.
  • Add the tahini, olive oil, and spices and pulse to combine.
  • Serve with warm pita and/or Stacy’s Jalapeño pita chips.
